Rising from History (Where it came from)
A restaurant inspired by the history of Cavite, the building itself is a replica of the Emilio Aguinaldo Shrine in Kawit, Cavite. The Shrine signifies the glorious past of the province, where the Declaration of the Philippine Independence was first read and the proclamation of the 1st Republic of Asia, the Republic of the Philippines was first announced. The name Republic of Cavite came from what Cavite is being called during those time, it is ‘Little Republic of Cavite’ of Gen. Emilio Aguinaldo. The venues of the restaurant are also named after the history.
The restaurant started as a small carinderia at the very spot of Republic of Cavite Restaurant long before the city hall of Trece Martires City was built. Owned and operated by Mrs. Cecilia del Rosario Pacumio or best known as Mama Cely, offers authentic Caviteño cuisine inherited from the family like Adobong Kaviteño, Onde Onde, Paborito ni Aguinaldo, Lihim ni Lola, Republic Buchi, and Lihim ni Emilio.
Intensifying the food service, Renato ‘Rene’ Onabia the Operations Supervisor and Head Cook of the restaurant, the city’s favourite Mamang Sorbetero with no college degree, no formal culinary education, but with hidden cooking talent and acquired restarant related experience have created another Caviteño cuisine for Republic of Cavite Restaurant a fusion recipes like Sinanglay ng Pla-Pla, Crispy Binagoongang Baboy, Cavite Express, Sinampalukang Inihaw na Manok (Grilled Chicken Sinampalukan), Labong Palabok, Grilled Eggplant Salad with Pickled Mango, etc. All ingredients strictly from Cavite, which made the restaurant separated from the other restaurant.
With the objective to showcase what Cavite could offer the restaurant serves as the ‘mean’ to make Cavite cuisine available to Caviteños, neighbouring provinces and foreigners together with the heritage of the province.

A Treat to Taste
To create a legacy out of Cavite, Mr. Andrew Pacumio, the owner of Town’s Delight, created Republic of Cavite, a restaurant where you can taste different Caviteño delicacies that would satisfy your taste buds.
Lihim ni Emilio, a Caviteño dessert inspired by our first president Gen. Aguinaldo, is composed of suman sa ibos, chico and mango topped with ice cream and pinipig.
How to Make "LIHIM NI EMILIO"?
The researchers conducted a pantomime in the Republic of Cavite where you can buy the delicacy named "Lihim ni Emilio". By this video, Jestine was preparing the delicacy and after that she served it to Rennard as Emilio Aguinaldo in the pantomime.

A survey about Lihim ni Emilio was conducted all over the 13 baranggays of Trece Martires City and the researchers found out that only few knew about this delicacy. So more promotions were needed for it to be well-known or famous all over the country.

Despite being well-known in Trece Martires, a native delicacy named Lihim ni Emilio needs more promotion for it to become famous in other places not only here in Cavite.
