We, Filipinos are very fond of going somewhere that you’ll have a remarkable experience. A break to the historic province of Cavite is never complete without bringing home special delicacies for which the province came to be known. And for this goal, the best place to visit is the Republic of Cavite Restaurant situated right at the municipality of Trece Martires.
Starting from its look, the Republic of Cavite is a replica of Emilio Aguinaldo’s mansion in Kawit, Cavite it has rooms and function halls suitably named after historic places.

Emilio Aguinaldo y Famy (March 22, 1869- February 6, 1964) was a Filipino general, politician and an independence leader. He played an instrumental role during the Philippine’s revolution against Spain and the subsequent Philippine-American War or War of the Philippine Independence that resisted American occupation. Aguinaldo became the Philippines’ first president and also the youngest (at age 29) to have become the country’s president, the longest-lived president (having survived at an age of 94) and the president to have outlived the most number of successors.
Emilio Aguinaldo had played a great role in our history. His proclamation of the Philippine independence was one of the most important parts of our history and because of this; Mr. Andrew Pacumio, a founding director of the Food Caterers Association of the Philippines, decided to build the restaurant Republic of Cavite to live a legacy out of his province. The best thing about the restaurant is its wide display of native delicacies that are unique and really delicious as they are prepared with original recipes. By that, many exceptional dishes were made by her wife Mrs. Concepcion “Cony” Pacumio. Those dishes were named after Emilio Aguinaldo like the featured dish in this video blog named “Lihim ni Emilio”.
Who wouldn’t be fascinated and intrigued by delicacies called Lihim ni Emilio? Its a yummy dessert consisting of suman sa ibos, chico and mango topped with ice cream and pinipig.
Our blog will let you know how this native food is a must to taste as how one of our favorite heroes, Gen. Emilio Aguilnaldo loved what were placed in it.
